Well, we’re starting all the kid’s activities in earnest this month, so it’s back to sandwich nights and slow cooker nights. Ah…fall is here, there’s no sticking my head in the sand.
Usually we have wonderful Indian Summers here and the month of October is often really nice, at least for the first weeks.
But not this year. We’ve had hail and thunderstorms along with buckets of rain in the last week. Tonight, the temperature is supposed to get down to 35 degrees- meaning there will be frost especially where there are pockets of cold.
So this afternoon my daughter helped me bring in the rest of the peppers, beans, and any tomatoes that had the faintest pink blush on them. I’ve put them in brown paper bags in the laundry room to see what will ripen. In past years I’ve gotten ripe tomatoes (usually the paste ones) into November. But that was when I brought them in two weeks later. We’ll see how far they can last this year.
Monday- Italian vegetable soup, artisan bread
Tuesday- Pork moo-shoo pancakes (made with tortillas)*, plum sauce, fried rice
Wednesday- Black bean & kielbasa soup (slow cooker)*, Quick Breadsticks, vegetable platter
Thursday- Turkey Italian Sausages, mashed potatoes, green beans, sliced tomatoes
Friday- Vegetable lasagna, green salad
Saturday- Turkey burgers on homemade buns, oven fries, carrots
Sunday- Pasta with sauteed vegetables
