Grated Baked Carrots with Lemon & Garlic
Simple yet amazing baked carrots made with grated carrots, lemon, and garlic is a quick, healthy side full of flavor and nutrition. Perfect with baked chicken, rice and a salad.

Ingredients
4
cups
peeled and grated carrots
about 5-8 medium to large carrots
1
tablespoon
melted butter*
plus more for baking pan (or oil)
1
tablespoon
olive oil*
(can use all oil to keep dish dairy free)
1
tablespoon
lemon juice
about 1/2 a medium lemon
1/2
teaspoon
each salt and pepper
2
cloves
garlic
minced
1
tablespoon
chopped chives
or parsley, optional
Instructions
Heat oven to 350 degrees. Butter or oil a 1 ½ to 2 quart baking dish well.
Grate carrots and add them directly to the prepared baking dish.
Add the oil and butter, lemon juice, garlic, and seasonings. Stir to combine.
Bake, uncovered, for 30 minutes.
Notes
*You can use all olive oil to keep it dairy free, I like to use both for the butter flavor.
Make Ahead & Storage
Option 1: Put the recipe together in the pan and refrigerate unbaked 1-2 days to bake right before the meal.
Option 2: Bake it completely 2-3 days ahead, refrigerate, and then gently reheat 10-15 minutes before serving, stirring once while heating.
Store leftover carrots
in the refrigerator for 4-5 days, reheating gently in the microwave or in a small saucepan.
