Add all the ingredients to the jar of a blender and whir until blended. Thin with 1 to 2 tablespoons of water as needed for pouring. (Makes 1 1/4 cups*)
Make Salad:
Layer the ingredients in the order listed on a large platter, ending with the feta cheese.
Drizzle with some of the dressing and pass the rest at the table.
Notes
*You won't use all the dressing for this recipe, but it makes a wonderful dressing on its own too and will keep for a couple weeks in the refrigerator.
