2-3poundpork sirloin roast(sometimes called pork sirloin tip roast, loin roast, or port loin - NOT tenderloin)
1.5tablespoonsall purpose spice rubthis recipe or spice mixture of choice (see options below)
1/2cupwater or broth
Instructions
Rub pork all over with spice mixture and place in slow cooker.
Add 1/2 cup of water or broth to the bottom of the slow cooker bowl. TIP: Don't pour it onto the pork or the seasoning will wash away.
Cook on low for 4-5 hours OR until the internal temperature reaches 145 degrees minimum. TIP: The closer you can keep the pork 145 degrees, the moister it will be so check at the 4 hour mark (145 is medium, 150-160 is medium well). This is best cooked on low, but you can cook on high for 2-3 hours.
Slice pork and serve. TIP: Use the juice from the slow cooker to brush onto the slices or drizzle over them on a platter to help capture flavor and moisture.
OR Shred pork with two forks and add back to the liquid in the slow cooker to moisten. Use for burritos/tacos, sandwiches, bowls, and more.
