Easy Slow Cooker Pork Sirloin – For Pulled Pork or Slicing

I’ve always loved that magical thing about tossing a few ingredients into a slow cooker, walking away for hours, and coming back to a meal that smells like you spent the whole day cooking. That’s exactly what this slow cooker pork sirloin does—minus any stress, mess, or a “what’s for dinner?” panic at 5 p.m.
This recipe came about mainly because I wanted to use the cheaper cuts of pork sirloin tips you can find at Costco. They come in a four pack and each weighs between 2-3 pounds. I typically pay about $18-$20 which brings it to a little over $2 per pound – such a deal, right?
The problem is most of the recipes for pork sirloin were for much larger cuts and if you cook sirloin too long the meat dries out. So I did some testing and came up with a simple technique that results in delicious pork with flavor you can adjust easily with different spice mixes.
So choose your spice rub, add a little water or broth, and a few hours later you will experience that slow cooker magic: tender, juicy pork ready to be sliced for Sunday dinner or shredded for tacos, sandwiches, or meal prep.

Ingredients
- 2-3 pound pork sirloin: I mentioned the Costco sirloin tips cut, but any small pork sirloin roast will work, though if it’s a thinner cut, you may want to start checking the internal temperature earlier.
- Season mix of choice: Tex-Mex Spice Rub/Mix, Thai Flavored Spice Rub/Mix, Mediterranean Spice Rub/Mix or Easy Homemade Cajun Seasoning
Or simply mix up seasonings just for this pork roast:
- 1/2 teaspoon EACH: salt, pepper, onion powder, garlic powder, and paprika
- 1/4 teaspoon dried thyme
TIP: Do not confuse pork tenderloin with sirloin – tenderloin is more, well, tender, and only needs 20-30 minutes of cooking vs. tougher sirloin that benefits from longer slow cooking.
How to make Slow Cooker Pork Sirloin

Step 1: Rub the pork all over with your spice mixture. Add 1/2 cup of water or broth to the bottom of the slow cooker. Set lid on crock pot and choose cooking level.

Step 2: Cook on low for 4-5 hours OR until the internal temperature reaches 145 degrees minimum. TIP: The closer you can keep the pork 145 degrees, the moister it will be so check at the 4 hour mark (145 is medium, 150-160 is medium well).

Step 3: Remove from slow cooker and let sit a few minutes before slicing.
TIP: Use the juice from the slow cooker to brush onto the slices or drizzle over them on a platter to help capture flavor and moisture.
Is pork sirloin ok for pulled pork?
Yes! I use this leaner cut of pork for a less fatty shredded pork all the time. The key is to soak the pork in the meat juices after shredding (or add another sauce right away):

Add the shredded pork to the slow cooker drippings and stir. Use a slotted spoon when serving for Mexican dishes, to top rice bowls, in sandwiches, and more.
Storage
- Refrigerator: Store either slices or pulled pork in an airtight container in the fridge for up to 5 days (keep the juices over the pork to maintain moisture).
- Freeze: Cooked pork sirloin freezes great – simply add portions to freezer containers (again with some of the juices), label and keep for up to 6 months.

Easiest Slow Cooker Pork Sirloin – Sliced or Shredded
Equipment
- 4-6 qt Slow Cooker
Ingredients
- 2-3 pound pork sirloin roast (sometimes called pork sirloin tip roast, loin roast, or port loin – NOT tenderloin)
- 1.5 tablespoons all purpose spice rub this recipe or spice mixture of choice (see options below)
- 1/2 cup water or broth
Instructions
- Rub pork all over with spice mixture and place in slow cooker.
- Add 1/2 cup of water or broth to the bottom of the slow cooker bowl. TIP: Don't pour it onto the pork or the seasoning will wash away.
- Cook on low for 4-5 hours OR until the internal temperature reaches 145 degrees minimum. TIP: The closer you can keep the pork 145 degrees, the moister it will be so check at the 4 hour mark (145 is medium, 150-160 is medium well). This is best cooked on low, but you can cook on high for 2-3 hours.
- Slice pork and serve. TIP: Use the juice from the slow cooker to brush onto the slices or drizzle over them on a platter to help capture flavor and moisture.
- OR Shred pork with two forks and add back to the liquid in the slow cooker to moisten. Use for burritos/tacos, sandwiches, bowls, and more.
