Cook the onions in butter or oil in a large skillet until they are softened but before they start to brown, about 5-6 minutes. Transfer to the pie shell, spreading to cover evenly.
Whisk the eggs, mustard, and salt in a bowl or 4-cup measuring cup and then pour over the onions in the shell.
Sprinkle with the grated cheese and then the paprika.
Bake at 400 degrees for 20 minutes and then turn pie plate around and lower temperature to 350. Bake for another 20 minutes. Note: You can insert a knife into the center to make sure the eggs have cooked, baking a few more minutes if needed.
Notes
Storage: Keep in an airtight container in the refrigerator for up to 5 days. Not recommended for freezing.Additions:
Meat- chopped cooked bacon, cooked chicken, or cooked sausage. Simply sprinkle any cooked meat on top of the crust, then layer the onion and cheese as normal.
Vegetables- sauté chopped sweet peppers along with the onions, or mild hot peppers for a bit of spice, or add some sliced tomatoes to the top of the pie before baking.
