Easy Onion and Cheese Quiche
If you’re craving something comforting without causing stress in the kitchen, this recipe for an easy onion and cheese quiche is your answer! A perfect blend of tender onions and melted cheese nestled in a flaky crust, this can be whipped up in minutes and served for breakfast, lunch, or a light dinner. Equally good for family weeknight dinners and weekend entertaining – simply make a salad while the quiche bakes and serve with some bread or use as a side dish.

I love onions so when I saw a recipe for “Viola’s Onion Pie” in an old church cookbook with the tagline “The was one of my mother’s favorite recipes which she served at many family trailer club outings,” I knew I had to try it (even though I don’t know what a trailer club outing is, lol).
In researching this, though, I realized this was more of a quiche since most recipes that are called onion pies have a top crust. Other than the title and a few adaptations during recipe testing, I kept the simpleness of the original recipe, as well as the low number of ingredients.
And was my onion-loving heart satisfied? Oh yes – what’s not to love about a forkful of tender onions and crispy cheese?
I love serving this as a meatless dinner with a hearty salad like this chopped salad with protein from beans, or this kale and protein-rich quinoa salad, or even this kale cranberry salad with feta and pecans.
It’s also just as good as a side dish to bring to potlucks or serve with spiced slow cooker whole chicken (or Instant Pot), mini meatloaves, or roasted sausages.
Plus, it’s super easy to use this as a base for other creations with the addition of cooked meats or more vegetables.

Ingredient Notes & Additions
At it’s basic, this recipe is just four ingredients – a crust, onions, eggs, and cheese – plus some seasonings. However, it’s easy to change things up.
- Unbaked Crust: In the photos I used one of the crusts from my go-to flaky crust recipe (just freeze the other crust). You can also use the quicker press-in crust from this quiche recipe, which is also results in a nicely flaky crust.
- Cheese: I’ve used a sharp cheddar here which is always a great choice with onions, but this is also good with tangy gruyere and mildly spicy pepper jack cheese.
- Additions: Meat– chopped cooked bacon, cooked chicken, or cooked sausage. Simply sprinkle any cooked meat on top of the crust, then layer the onion and cheese as normal. Vegetables– sauté chopped sweet peppers along with the onions, or mild hot peppers for a bit of spice, or add some sliced tomatoes to the top of the pie before baking.
Let’s Make an Onion and Cheese Quiche

Step 1: Sauté. Cook the onions in the olive oil or butter until soften, but not really browning much. Caramelizing them fully cooks them a bit too much, resulting in a thinner quiche.

Step 2: Assemble. Layer the onions in the crust, beat the eggs with mustard and salt and pour over the onions before sprinkling on the cheese and paprika over all.

Step 3: Bake. You’ll start the baking at 400 degrees and then lower the oven to 350 after 20 minutes, baking for another 20 minutes until everything is puffed and golden. You can insert a knife into the center to make sure the eggs have cooked (and cook a few more minutes if needed) before removing to cool.

Storage
- Storage: Keep in an airtight container in the refrigerator for up to 5 days. I don’t recommended this for freezing.
- To Reheat: I love how the air fryer or toaster oven crisps up the crust again when reheated for about 3-5 minutes (depending on your appliance). You can also microwave for 30 seconds to 1 minute.

Easy Onion and Cheese Quiche Recipe
Equipment
- 1 9-inch pie plate Or springform pan (a deep dish works the best)
Ingredients
- 1 unbaked pie shell use this traditional crust or this press-in crust
- 4-5 medium onions, sliced thin
- 1 tablespoon oil or butter
- 3 large eggs,
- 1 teaspoon Dijon mustard
- 1 teaspoon sea salt
- 1 cup grated sharp cheddar cheese or other flavorful cheese like gruyere or pepper jack.
- 1/4 teaspoon paprika
Instructions
- Heat oven to 400 degrees.
- Cook the onions in butter or oil in a large skillet until they are softened but before they start to brown, about 5-6 minutes. Transfer to the pie shell, spreading to cover evenly.
- Whisk the eggs, mustard, and salt in a bowl or 4-cup measuring cup and then pour over the onions in the shell.
- Sprinkle with the grated cheese and then the paprika.
- Bake at 400 degrees for 20 minutes and then turn pie plate around and lower temperature to 350. Bake for another 20 minutes. Note: You can insert a knife into the center to make sure the eggs have cooked, baking a few more minutes if needed.

This recipe is amazing. Deceptively easy, big on flavor. Much healthier than a traditional quiche without sacrificing on flavor. Make this for your friends and family, they’ll all think you’re a master chef.
