Instructions
Preheat oven to 325°. Grease or line a large sheet pan with parchment.
Combine nuts, and optional sesame sticks or other mix-in you choose in a large bowl.
Heat butter (or oil) and remaining ingredients in a small saucepan over medium-low heat 2-3 minutes (until butter is melted if using). OR add all the ingredients to a 2-cup or larger glass measuring cup and microwave about 1 minute or until butter is melted, if using.
Pour sauce mixture over nut mixture and stir to coat well. Taste to see if you'd like more Sriracha or salt. Spread in an even layer on prepared baking sheet.
Bake for 25-30 minutes, stirring once at the 15-minute mark.
Remove from the oven and sprinkle with a bit of salt ,if desired. Stir and let cool before serving.
Store any leftovers in an airtight container at room temperature for 4-5 days.
Notes
*You'll need 8 cups total of nuts and any mix-ins, if you're using. Small crackers, rice checks, pretzels work instead of the sesame sticks. Or use all nuts.**It's not as spicy as you'd think - I used 3+ tablespoons since we like things spicy. 1 tablespoon would be pretty mild.
