Cashew Energy Balls with Cranberry & White Chocolate

These homemade energy balls are an easy way to keep a satisfying snack ready for busy days. Sweet dried cranberries and white chocolate with cashew butter and granola come together in a no bake recipe that’s both special and quick to make. They store well in the fridge so they will be ready for lunches, afternoon snacks, or quick grab-and-go bites throughout the week.

Granola energy balls are one of my family’s favorite real-food snacks. I like that they are easy to make, don’t require baking, are full of good-for-you foods, use up the last bit of granola when I’m making a new batch, and make a perfect afternoon snack with my regular cup of tea. Seriously, what’s not to love?

The rest of my family just likes how they taste – and that they’re easy to grab-and-go. For years I’ve made a version of this base energy bites recipe using peanut butter or sometimes almond butter.

And then one year I was given a jar of cashew butter – and I fell in love with it! I had no idea it would be the perfect mild ingredient for energy balls, allowing it to blend with so many flavors without overtaking them (I’m looking at you, peanut butter). My energy ball making world just expanded – and this classic combo of cashew, cranberry, and white chocolate was born. (Sigh…so good.)

Make Cashew Energy Balls

With just 5 or 6 ingredients and 3 steps, you can make these energy balls anytime!

Ingredients: Granola (preferably homemade), Cashew butter, Dried cranberries (these are apple juice sweetened!), White chocolate chips (optional- look for chips with cocoa butter like these), pure maple syrup, finely chopped cashews.

Directions: Mix granola, cashew butter, cranberries, white chocolate chips (if using) and maple syrup in a medium size bowl until thoroughly combined. Use a small cookie scoop (about 1 tablespoon size) to make the round bites and dip each into the chopped nuts, coating completely.

Keep in the refrigerator for whenever you need them (they last for weeks). I’ve taken them to athletic events and picnics and they are fine for a couple hours at room temperature, they just get a bit soft.

This combo was definitely a winner for us and became a go-to favorite version of energy balls snacks. I still make the peanut butter-chocolate chip version when I don’t have cashew butter, but whenever I find cashew butter on sale you know what I’ll be making with it!

TIP: I’ve found it’s been harder to find cashew butter for a decent price, so I’ve been making my own with a bag of cashews, salt, and a food processor. So easy.

Cashew Energy Balls with Cranberry & White Chocolate

Ingredients

  • 3/4 cup granola
  • 1/2 cup cashew butter
  • 1/3 cup dried cranberries
  • 1/4 cup white chocolate chips (chopped if chips are large), optional
  • 1 tablespoon pure maple syrup
  • 1/4 cup finely chopped cashews for coating

Instructions

  • Mix granola, cashew butter, cranberries, white chocolate chips (if using) and maple syrup in a medium size bowl until thoroughly combined. (You can refrigerate the mixture at this point if it seems too sticky, but I usually don't)
  • Use a small cookie scoop (about 1 tablespoon size) to make the round bites and dip each into the chopped nuts, coating completely.
  • Store in an air-tight container in the fridge.

Notes

Storage: the bites will keep in the fridge for up to a month, if they last that long. They are fine a few hours unrefrigerated to take to school, meetings, or sports events but should be refrigerated for longer storage.

  2. Hi. Need help, pls? I give Plasma Twice a week (2-3 days apart) and would appreciate some Recipes that are full of Protein…I’m running out of ways to flavor Chicken Breasts.
