I am loving this recipe for peanut butter oatmeal bars! They have such a great combination of things that make a good dessert:
- They contain gooey peanut butter, hearty rolled oats, and decadent chocolate chips, all wrapped up into one irresistible dessert with sweetened condensed milk.
- They are quick and easy to make and bake in about 40 minutes.
- The bars are also naturally gluten free when made with oat flour along with the rolled oats. If you’re not gluten free, you can use regular flour or whole wheat pastry flour.
After one bite you’ll see why these are so good – they melt in your mouth with the perfect ratio of creamy filling to crispy crust and peanut butter flavor to chocolate.

You’ll need the following ingredients to make these easy peanut butter oat bars:

Ingredient Notes & Substitutions
- Oat Flour: Use this to make the bars gluten free, otherwise you can use the same amount of all purpose or whole wheat pastry flour.
- Old Fashioned Oats: oats are naturally gluten free, but if it’s important look for brands that guarantee they are not processed in plants where wheat is also processed.
- Sweetened Condensed Milk (not evaporated milk): You can use either store bought or this homemade no-cook sweetened condensed milk with maple syrup.
- Peanut Butter: You’ll want to use a natural style without added sugar, either creamy peanut butter or crunchy peanut butter. Feel free to substitute any natural nut butter for a different variation.
- Brown Sugar: Use light or dark or substitute with coconut sugar.
- Melted Butter: I haven’t tried this with coconut oil or regular oil but if you have tried this with other crumb bars and like the result you can use it here, too.
- Chocolate Chips: Dark chocolate chips, semi sweet or milk chocolate. You can also leave them out or replace them with another type of chip or chopped nuts.
How to Make Peanut Butter Oatmeal Bars: Step by Step

Step 1: Make crust/topping. Combine all ingredients except the milk, peanut butter, and chips in a medium bowl and mix until well combined.

Step 2: Separate crust & topping. Remove one and a half cups of the mixture to a small bowl and set aside for the topping.

Step 3: Press and bake crust. Press remaining oat mixture into a greased or lined 13×9 inch pan, baking for a few minutes before adding the filling.

Step 4: Mix filling. In a small bowl or measuring cup, combine the sweetened condensed milk and peanut butter. If it’s too thick, add a splash of milk or water for spreadable consistency.

Step 5: Spread filling. Remove crust from oven and pour the condensed milk-peanut butter mixture all over crust, spreading evenly as you’re able (be gentle with the warm crust- see tip below).

Step 6: Add toppings and bake. Evenly sprinkle the set aside oat mixture over the peanut butter layer, followed by the chocolate chips. Press gently and bake about 20 minutes.

Recipe Tips
- TIP: Lining with parchment paper allows you to lift out the cooked bars to more easily cut them.
- TIP: Don’t pour the milk-peanut butter mixture into one spot on the partially baked crust – it will sink some and stick to the crust as you try to spread it. Instead, pour or spoon the mixture all over the top as you can and simply pull the mixture to the edges as you can. It will spread as it cooks and the variations in thick and thin filling are good!

Storage
Storage: You can store the bars at room temperature in an airtight container for a couple days or in the fridge for 4-5 days.
Freezing: These oatmeal bars are great frozen! To freeze, layer them in an airtight container or freezer baggie, separating rows with parchment paper if needed for 3-4 months.

Peanut Butter Oatmeal Bars with Chocolate Chips
Equipment
- 13×9 inch baking pan
Ingredients
- 2 cups rolled oats
- 2 cups oat flour (or whole wheat pastry flour or all purpose)
- 3/4 cup packed brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, melted
- 1 14-ounce can sweetened condensed milk (or homemade with maple syrup)
- 1/2 cup natural peanut butter (or other nut butter)
- 1 cup chocolate chips*
Instructions
- Heat oven to 375 degrees F. Grease or line a 13×9 inch baking pan.
- Combine oats, flour, sugar, baking soda, and salt in a large bowl. Stir in melted butter until combined.
- Remove 1-1/2 cups of the crumb mixture and set aside.
- Press remaining crumb mixture into prepared baking pan. Bake for 12 minutes.
- Meanwhile, mix sweetened condensed milk and the peanut butter in a small bowl or glass measure. Pour over partially baked crust, leaving 1/4-inch around the edges. TIP: if thick you can make more pourable by adding a splash of milk or water.
- Sprinkle reserved crumb mixture and chocolate chips evenly over the milk layer, pressing down slightly.
- Bake 20-22 minutes more or until golden brown around the edges.
- Cool completely before cutting bars.
Notes
- Omit chips completely.
- Use any type of chip as a substitute.
- Use equal amount of candy coated chocolate pieces (fun for holidays).
- Substitute chopped nuts for the chips.
