Fresh Tomato Bruschetta Topping Recipe

Looking for a last minute appetizer that is fresh and delicious? Make a tomato bruschetta topping for toasted bread in 10 minutes with just 5 ingredients. The simple combo of garden fresh tomatoes, onions, and garlic combines into the most amazing flavor, like summer in a bowl.

When the garden is producing so many beautiful tomatoes in the summer, one of my favorite things to make with them is this simple appetizer (or lunch!) made with fresh diced tomatoes, onions, garlic and a splash of olive oil and balsamic vinegar.

When you spoon this tomato topping onto toasted bread (aka, bruschetta) – oh my goodness, the flavor is amazing!

And talk about an easy summer menu: just this topping, some good bread to put it on, some grilled protein or even just a cheese plate, and you’ve got a delicious – and inexpensive – meal.

Ingredients

I’m sure there are lots of ways to make a tomato topping for bruschetta. My simple version consists of:

  • Perfectly ripe garden tomatoes (using super flavorful heirloom varieties is my favorite, but any tomatoes work) Tomatoes shown above are a large yellowish ‘Mortgage Lifter,’ ‘Cherokee Purple,’ (top right) and ‘Brandywine’ (bottom(.
  • Sweet onions
  • Garlic
  • A bit of olive oil
  • A splash of balsamic vinegar
  • Salt and pepper

Ahhh, just that simple list brings me right to summertime.

Obviously, a recipe this simple doesn’t have much in the way of steps.

The one thing that is important, though, is to dice the tomatoes and onion as small as possible. This makes spooning the topping on bread that much easier.

What is bruschetta?

Bruschetta in Italian means toasted bread with toppings. The bread is always brushed with olive oil and garlic and then grilled or toasted. It’s topped with any number of things, but a tomato-garlic mixture seems to be most popular.

How do you pronounce bruschetta?

I didn’t know this for the longest time! The “ch” in Italian is pronounced “k,” so it’s pronounced bruˈsketta.

Fresh Tomato Bruschetta Topping Recipe

Use garden fresh ripe tomatoes, sweet onions, and garlic to make a super simple appetizer with toasted bread that feels like summer in a bowl.

Ingredients

Instructions

  • Finely dice ripe, garden tomatoes (remember you want them to fit on a piece of bread). Add to a medium serving bowl.
  • Finely dice the onion and add it to the tomatoes.
  • Mince garlic and toss it into the bowl.
  • Add the olive oil and balsamic vinegar.
  • Add salt and pepper to taste.
  • Mix together and serve right away, using a slotted spoon to put in on pieces of toasted bread brushed with olive oil and garlic.

*Heirloom tomatoes are amazing in this!
Make Ahead: This is best served the day it’s made, but making it a few hours early helps the flavors to meld – keep in the refrigerator until serving time.
