This installment of our Healthy Eating series is all about main dishes. Not just any mains, though – these are the whole food recipes our family loves and eats time and again, so you know they have all passed the “this is so good” test.

Not only are they delicious and healthy, the recipes are also easy. There are a few that may take a bit more preparation since the maple-mustard chicken comes to mind, since the chicken needs to be coated, but even then we’re talking about an hour instead of 15-30 minutes.

Wait. 15 to 30 minute meals, really?

I’m always doubtful of the times given on some recipes, since chopping vegetables seems to take a long time, but there are honestly some 15 minute meals here, usually made with eggs or precooked chicken (either rotisserie or homemade rotisserie) that I like to keep in the freezer for times we need to eat quick.

Most of the time, though, I like to have 45 minutes to an hour for dinner prep and cooking, since that seems to be the sweet spot for meals that are healthier with more vegetables and with thought given to using up what we have.

I believe what we put into our bodies is so important that it really does deserve the time to plan and prepare on a regular basis. You can read more on this and tips to streamline cooking here.
