We need all the help we can get in the northern hemisphere during this firmly-in-the-middle-of-winter month.
Hopefully this list of seasonal dinner menu ideas can help you plan your family dinners and give you some fun things to look forward to (yes, it's only dinner, but sometimes it's the little things, right?).
The recipes featured below are all tried-and-true recipes that actually show up on our own dinner menus. They illustrate some of simple homemade life key recipe musts:
- From scratch yet easy.
- Use real, healthy ingredients.
- And are delicious.
What about desserts?
We don't regularly have dessert, though a small piece of after dinner dark chocolate is our tradition.
But I'm providing two ideas for lighter, healthier dessert options if you'd like to include them in your menus.

Week 1
Vegetable Chicken Stir Fry on Noodle Pillows

Ham & Bean Soup (using ham bone), Easy Artisan Bread, salad
Mediterranean Fish Bake, leftover artisan bread, salad

Week 2
Homemade Chicken-Pesto Greek Style Pizza (made with 1-hour pizza dough), carrots & Creamy Feta dip
Simple Black Bean Quesadillas, Guacamole, Salsa, Cumin-Lime Slaw
Baked Cheesy Pasta; salad
Easy Potato And Caramelized Onion Frittata, Easy Sourdough Artisan Bread; salad
Curried Lentils with Bacon & Browned Cabbage, pita chips or bread, cut up carrots and vegetables
Week 3
Cauliflower Cheese Soup (one of my all-time favorite soups!), Easy Homemade Hummus & cut vegetables, Artisan bread or pita

Quick And Easy Chocolate Lava Cakes (maybe a fun Valentine's treat? They are super quick and easy!)
What about Saturdays & Sundays?
Our family’s menu always has a couple of standards for the weekends - it's one of the ways I make menu planning easier!
Saturdays alternate between burgers on homemade buns (or pigs-in-blankets) & fries and homemade pizza.
Sundays are mostly on-your-own leftovers (if nothing is available, a quick pasta is made using our frozen roasted tomato sauce or pesto).
